How is the chocolate produced at Neuhausschoggi?

Our chocolate is produced using the bean-to-bar method. We roast the cocoa beans ourselves and process them into the finished couverture. We use up to 14 different cocoa varieties without any additives.You can find more information on our blog.

Bean to Bar means that chocolate is made directly from cocoa beans and not from purchased couverture.You can find more information on our blog.

Why does bean-to-bar chocolate taste different?

Since each cocoa origin has individual aromas and the manufacturer controls the entire process, significantly more complex flavor profiles are created.

Is all Swiss chocolate bean-to-bar?

No. Many manufacturers process ready-made chocolate mass or couverture. Bean-to-bar manufacturers, on the other hand, start with raw cocoa beans.You can find more information on this topic in the following post: Blog.

How long does the production process take?

Depending on the recipe, the entire manufacturing process – especially the milling and conching – often takes several days, up to a maximum of 4.5 days.
